Grandma’s Caesar Salad

This is a very special recipe to me. This was one of the first recipes that my Grandma taught me. It took a while to remember it but with a few phone calls to family members to put all the pieces together, we did it!! In the picture you can see the wooden bowl that my Uncle Andy received when she passed and it actually had a crack in it. With some good ole elbow grease and some love he was able to fix the crack and reseal it to pass it on to me. I know those two and Grandpa are looking down smiling every time I use that bowl to make this salad.

Ingredients

  • 2 Garlic Cloves, minced

  • 2-3 Anchovies in oil, minced and smashed

  • ½  Lemon, juiced

  • 2 Egg Yolks

  • 2 tbsp Olive Oil, use a good one

  • 1 tsp Dijon Mustard 

  • 1 tsp Worcestershire sauce

  • ½ cup Parmigiano-Reggiano, freshly grated!!!!

  • ¼ tsp Salt

  • ¼ tsp Freshly Ground Black Pepper

  • Romaine leaves

  • Croutons 

How to cook 

  • In a bowl, add your anchovies you minced into a paste, if you like more of a stronger taste add a little more. 

  • Add in the egg yolks. Whisk the two together. 

  • Add in the mustard, garlic, worcestershire, pepper and whisk again. 

  • Add in the lemon juice, whisk. 

  • Slowly add in the oil and whisk as you go, then add in the salt and whisk until fluffy. 

  • Add in half the cheese and whisk once more. 

  • Toss with the lettuce and croutons. Top with the rest of the cheese and a little more pepper before serving.
